Koma Soba is named after the Koma (piece) of Shogi (popular Japanese board game, also called "Japanese Chess"). This Soba Noodle is made in Yamagata Prefecture which is known for the largest production of Koma in Japan. Unlike other Soba, the color is darker, the flavor is slightly richer, and the texture is firmer. This soba is also extra long so you can enjoy nice slurping whether serving cold or hot.
