This extra fine shave katsuobushi—also called bonito flakes—is exceptionally light and aromatic, making it perfect for topping rice, tofu, okonomiyaki, salad, or any dish that benefits from a burst of umami. The thin, feathery flakes gently curl and dance when placed over hot food, adding both flavor and visual appeal.

Produced by Matoba Suisan, a long-established katsuobushi maker in Makurazaki, Kagoshima—Japan’s most renowned region for high-quality katsuobushi—each batch is made from carefully selected bonito (skipjack tuna) and crafted through a meticulous process of simmering, smoking, sun-drying, and fermenting. The result is an incredibly clean yet rich umami flavor with a naturally sweet, smoky aroma.

While most ideal for topping dishes, this katsuobushi can also be used to make a light, aromatic dashi (Japanese soup stock). Just a small amount enhances soups, simmered dishes, and sauces with depth and complexity.
