Adachi Jozo – Tradition of Kioke Brewing Since 1889
YUI (結) Premium Shoyu is crafted by Adachi Jozo, a historic shoyu brewery established in 1889. Located in Japan, Adachi Jozo is one of the few remaining producers dedicated to brewing in kioke wooden barrels—a practice that today accounts for less than 1% of soy sauce production. Their 32 Yoshino hinoki cedar barrels, some in use for over a century, are carefully maintained by master craftsmen to preserve the living ecosystem of microorganisms that bring depth and complexity to each brew. Adachi Jozo’s philosophy is rooted in honoring time, nature, and human connection, ensuring that the art of barrel-aged shoyu making continues for future generations.
YUI – A Premium Barrel-Aged Shoyu
YUI is made with just three main ingredients: organic soybeans from Hokkaido, organic wheat, and salt from the Seto Inland Sea. The shoyu is naturally brewed with the clear riverbed water of the Sugihara River, then slowly aged in wooden barrels for 14–18 months. Each barrel imparts its own character, and the flavor changes with the seasons and climate, resulting in a shoyu that is rich in umami, balanced in saltiness, and layered with subtle aromas unique to this traditional process. The name YUI, meaning “ties” or “relationship,” reflects Adachi Jozo’s philosophy of fostering bonds between farmers, craftsmen, and community through their brewing.
Limited Production
Every bottle of YUI Premium Shoyu is enclosed in a special box with the barrel number marked. This thoughtful presentation not only preserves the rarity of the shoyu but also makes it a gift-worthy item.
