Shojin Shirodashi is a refined, all-plant dashi base made by Nitto Jozo in Aichi, Japan. It starts with their signature White Tamari—brewed from Japanese wheat, sea salt, and mountain spring water in the mountains of Toyota—then blended with umami-rich ingredients such as dried shiitake mushrooms, dried daikon radish, Hokkaido ma-kombu, and Mikawa mirin. Without any animal ingredients, yeast extract, or added sugar, this dashi captures deep umami and gentle sweetness purely from the natural flavors of the ingredients.

Versatile Finishing Condiment
This shirodashi adds elegant umami to a variety of dishes—from soups, stews, and noodle broths to dressings, marinades, and tamago-yaki (rolled omelets). A splash can also beautifully enhance steamed or boiled vegetables, bringing out their natural sweetness. Its light color and delicate flavor make it especially suited for Kyoto-style and shojin (plant-based Buddhist) cooking.

Nitto Jozo – Tradition and Craft Since 1938
Founded in 1938, Nitto Jozo is known for its artisanal white tamari (shiro shoyu), brewed in small batches using traditional methods passed down for generations. Their philosophy is rooted in simplicity—using the purest ingredients and allowing nature’s own microorganisms to develop rich, layered umami over time.
