Since the Meiji Period in 1902, Yamaki Jozo has been producing the most exceptional miso using only traditional methods in the town of Kamikawa in Saitama Prefecture. This rich, full-term savory miso features the delicious flavor of whole grain brown rice - slightly lighter and sweeter than barley miso. This miso is unpasteurized with no preservatives or chemical additives, so you can rest assured that you are receiving all the nutritional benefits.
Unlike most miso that is artificially "aged" for weeks, this brown rice miso is naturally aged in hand-hewn cedar kegs for at least two summer seasons to develop its full-bodied flavor and mouthwatering umami flavor. As the production of organic brown rice miso requires specific techniques, it took Yamaki Jozo many trials until the method was perfected about 40 years ago. Made with pure mountain spring water of Kamikawa and 100% organic ingredients including Japanese grown organic whole soybeans, this miso is considered to be the gold standard for excellent miso and its flavor is unsurpassed.
