Katsuobushi is a foundational ingredient in Japanese cooking—made by shaving dried, fermented, and smoked bonito (skipjack tuna). This fine shave version is especially suited for making dashi (Japanese soup stock), but it’s also excellent as a flavorful topping.

Produced by Matoba Suisan, a long-established katsuobushi maker in Makurazaki, Kagoshima—Japan’s most renowned region for high-quality katsuobushi—these bonito flakes are crafted with deep expertise and care. The fish undergoes a meticulous process of simmering, smoking, sun-drying, and fermenting to develop a clean yet complex umami flavor and a beautifully refined aroma.

Just a small amount can add rich depth to soups, simmered dishes, or sauces. It also shines as a topping for rice, tofu, or salad.
