Hand-made Rolled Omelet Pan by Kobo Aizawa, from Niigata, Japan.

Kobo Aizawa is located in Tsubame City, Niigata Prefecture, an area renowned for its production of high-design items made of stainless steel and other materials. The company, which specializes in kitchen goods, was founded in the 1920s (Taisho Era) with the aim to create goods of superior quality that combine functionality and esthetic beauty. The endless pursuit of high quality goods has led Kobo Aizawa to produce items that have aesthetic design and functionality. When you take a look at their products, you might notice tiny details, which is the result of meticulous planning.

Genuine copper rolled omelet pan is the result of Japanese skills of artisan. It’s  handmade and formed from a single sheet of copper. The copper sheet used to construct this pan is thicker and of higher quality than the copper used in the majority of omelet pans found on the market. This lends to the extra weight and sheen. Upon close inspection, you can see the detail in the welds, rivets, and the beaten metal of the copper handle joint. Even the maker’s mark is a lovely accent. Because copper conducts heat very well, the egg is cooked evenly and will be super fluffy. The inner part of the pan is coated with tin to prevent rust and strengthen the overall structure. The beautiful wood handle will keep your hands away from the heat. You may end up admiring this work of art as much as you use it.

Usage and Care

The pan and handle require some assembly
Included: Copper pan (1), Wood Handle (1), Wood Screw (1)

  1. Shove Wood handle into copper joint
  2. Screw the handle to the copper joint with the screw to attach
  3. As the handle becomes loose, you can remove the screw and reattach the handle more securely.

Required Seasoning

  1. Wash the pan with warm water and a soft sponge. Avoid steel sponges and abrasives as these will scratch the surface.
  2. Rinse and thoroughly dry the pan.
  3. a. Pour a generous amount of vegetable oil into the pan (to about ¼| 0.8 cm above the bottom); and set over very low heat (use the lowest setting possible) on a gas stove for 5-10 minutes. Be careful not to burn the oil.

    While the oil is heated, it is important to make sure that the sides and corners of the pan are well-coated. To facilitate this, put a folded piece of paper towel in the pan and using a pair of wooden chopsticks or other wood utensil, continuously spread the oil into the corners and up the sides.
  4. Turn off the heat and let the oil cool.
  5. Pour the excess oil into another bowl (you can save it for cooking)
  6. Wipe with a clean cloth or paper towel and your new pan is ready to use!
Prolong the life and quality of your pan

It is important to avoid heating this pan while empty or use it over high temperatures. The copper conducts heat extremely well so it is possible that if the pan gets too hot, the tin lining could melt, which would result in irregularities that cannot be fixed.
Please use this pan over low heat only.
Over time a bluish patina might develop on the inside and outside of the pan. This patina is non-toxic; however, a metallic taste may leech into your food.
Please maintain your pan regularly of food debris (clean and polish) otherwise it might develop a patina.

  • For gas stove top use only.
  • This product is not suitable for electric stove, induction top, oven or microwave.
  • Never heat the pan while it’s empty.
  • Never use the pan over high heat.
  • Hand wash only
  • Rinse with water and wipe very lightly with a paper towel to avoid removing the seasoning
  • Use mild soap and a soft sponge only if necessary.
  • In order to maintain the shine outside of the pan, use sponge and dish soap to polish.
  • Dry completely before storing
