Golden Yolk Mayonnaise With a Bright Yuzu Chili Finish

This mayonnaise is made with golden egg yolks from free-range hens raised on nutrient-rich diets, giving the yolks their deep orange color and concentrated flavor. The base is rice bran oil, a traditional choice in Japanese cooking valued for its clean, neutral character,  and then layered in with real chili heat and bright yuzu citrus.

The chili builds steadily through the bite, while the yuzu cuts in with sharp, citrusy lift, keeping the spice lively rather than heavy. Each egg is cracked and sterilized by hand before the yolks are freshly whipped and bottled in small batches. 

This is a quietly rich, balanced spicy mayonnaise with a natural depth of umami that is suited to everyday use across sushi rolls, sandwiches, coleslaw, and roasted vegetables.
