Extra Long Country-style Soba from Northern Japan
Koma Soba is named after the Koma (piece) of Shogi (popular Japanese board game, also called "Japanese Chess"). This Soba Noodle is made in Yamagata Prefecture which is known for the largest production of Koma in Japan. This northern region is also known for Inaka Soba (country-style soba noodle), which contains more outer layers of soba berries in noodles. Thus the color is darker, the flavor is slightly richer, and the texture is firmer compared to other common styles of soba. This soba is also extra long so you can enjoy nice slurping whether serving cold or hot. Very satisfying!
