Specially Designed Double-beveled Japanese Knife Series

Originally from Kyoto, Chef Mikizo Hashimoto is one of the most respected kaiseki cuisine chefs in Japan and is the owner chef of restaurant, Ichirin, in Tokyo.These knives are designed as a result of Mr. Hashimoto’s deep knowledge and attention to details of cooking. Its shape is meticulously calculated to work perfectly for delicate and precise tasks which are typical in Japanese cooking.

By making it double-beveled, as opposed to single-beveled as Japanese kitchen knives usually are, it is easy to use not only at home but also in professional kitchen.

    Usage and Care

    • Hand wash only. Use mild soap and soft sponge.
    • Avoid any other rough scrub, as it could damage the surface of the product.
    • Dry completely by wiping with a cloth immediately after cleaning before store it. Leaving any moisture to the blade/ air drying it could occasionally cause rust.
    • We suggest having your knife sharpened by a professional sharpener at least once a year.
