Instead of relying on soy sauce, it is seasoned with salt and carefully balanced with rice vinegar, kombu, and bonito dashi, allowing the citrus character of yuzu to remain clear and expressive. The result is a ponzu that feels light, fragrant, and precise.
Mild Salinity for Versatile Everyday Use
Traditional sun-dried, flat-pan–boiled sea salt from Izu Oshima gives this ponzu its soft, mellow saltiness. It enhances ingredients without masking their natural flavors, making it especially versatile. Use it for hot pots, grilled or sautéed meat and fish, tofu dishes, or as a dressing for salads and vegetables. A light drizzle just before serving adds brightness and a clean finish to many dishes. Handcrafted Vinegar Brewing Rooted in Tradition
Produced by Totsuka Jozo in Yamanashi, this yuzu salt ponzu reflects the philosophy of a small, husband-and-wife–run vinegar brewery dedicated to traditional fermentation. Carrying on the spirit of the previous generation, Totsuka Jozo relies on time-honored methods and hands-on craftsmanship, using simple tools so the brewer can stay closely connected to the process. Believing that fermentation is a dialogue with living microorganisms, they carefully observe seasonal changes and work patiently with acetic acid bacteria to create vinegar that is safe, expressive, and deeply flavorful—while preserving the unique character of their house vinegar.
