While 97% of tea grown in Japan is an improved species,KasugaYakuso-ten specializes in growing the original heirloom species of tea that came from China. Tea and medicinal herbs have a rich tradition in the Mt. Ibuki areaofGifu Prefecture, starting over 1,000 years ago. A famous feudal lord of the area, Oda Nobunaga,even had a private herb garden there.KasugaYakuso-ten uses traditional methods to grow and harvest their tea leaves,without the use ofany chemical fertilizers or pesticides. Thus, all their tea products are completely organic.
This aromatic hojicha is made by delicately roasting green tea leaves and contains a lower in caffeine content and rich umami flavor. This tea is made from a blend of the heirloom tea and less than 20% of Yabukita, another locally grown tea which creates a great combination of flavors.
The tea is harvested in the Mt. Ibuki Kasuga area, which has been known for its high-quality herb production for a millennium. The area’s tea leaves are rich in amino acids, producing deep umami flavor.
Hojicha is a specialty roasted green tea. Its roasting process results in a reduction in caffeine, making this tea suitable for drinking any time of day or night. It is also a tea that children can enjoy as well.
Recommended brewing methods:
Hot: Place 1 tea bag in a tea cup or small tea pot. Boil water and let cool until it is around 195 F (90 C) degrees and then pour 7 – 10 fl.oz (200 – 300 ml) of the water into vessel with tea bag and steep for 2 minutes. If using a teapot, serve into each tea cup evenly, a small amount at a time, until the final drop is poured.
Cold: Place 2 to 3 tea bags in 1 liter of water and refrigerate for 8 hours.
