Established in 1919 in the Hida region of Gifu Prefecture, Funatsu Shoyu specializes in artisanal miso and soy sauce products. All their products are fermented the traditional way in large cedar barrels in a natural environment.
Hoba Miso is a traditional delicacy of the Hida region of Gifu Prefecture, and it’s been enjoyed by its people for many years. You put seasoned miso (normally with mirin, sansho, etc.) on dried hoba (magnolia) leaves, and slowly grill until it becomes aromatic. Traditionally, Hoba Miso is made over charcoal grill, but it’s also good on a pan over gas stove, too. You can really enjoy the beautiful aroma of rich miso and soothing hoba leaf after it is cooked.
Each set of Funatsu Shoyu’s Hoba Miso comes with a set of 3 which includes a dried hoba leaf and seasoned miso paste. The miso is naturally fermented in their historic cedar barrels (100 years old!) and seasoned with local sansho (mountain pepper) powder, mirin, and sugar.
-How to Enjoy Hoba Miso-
To enjoy, gently unwrap the hoba leaf and soak the leaf in cold water for about 10 minutes, then rinse and pat dry. In a Toban (or a grill pan which can be heated dry), put a piece of aluminum foil in the bottom (to prevent the magnolia leaf from burning and also for easy cleaning), place the leaf, and spread the miso paste in the center. Set the Toban over gas stove (medium-low heat), and let it cook until it becomes aromatic. Turn off the heat. Sprinkle generous amount of thinly-sliced green onion (optional) and enjoy with rice, vegetables, meat, or on its own.
You can also cook the miso together with mushrooms, meat, etc. on the hoba leaf as a complete dish to enjoy.
