Hand-crafted, Versatile Sushi Mold by Master Artisans
This sushi mold is handmade by Umezawa Mokuzai from Mie Prefecture and is extra versatile in the sense that it can make both maki rolls or oshi-zushi (pressed sushi). It's made of Japanese Hinoki cypress that has a natural soothing aroma. This particular cypress is of high quality and contains natural anti-bacterial properties. It comes with a bamboo mat or makisu to make maki rolls-- utilize it with the mold to create sushi with ease.
How to Use (Maki Rolls):
Place the bamboo mat in the mold, making sure it touches the bottom of the mold and the excess is unfolded on the sides of the mold.
Place a square sheet of nori (make sure the shiny side is facing the bottom) on the bamboo mat then spread some rice evenly on the bottom and sides, inside of the mold. Make sure it is no more than 1/3 full. Indent the middle of the rice, and add your desired fillings, making sure to keep the fillings in the center. Place additional rice over the filling.
Wet the top press. Fold one side of the nori (closer to you) over the rice and press the rice and fillings down. Fold the other side of the nori (lightly wet with rice vinegar if necessary) to seal. Fold the excess bamboo mat over the sushi, and press down with the top press.
Take the bamboo mat out of the mold and shape it to your desired shape (round or square) with your hands. Make sure to squeeze tightly to seal everything in and to achieve your desired shape.
