Its shape is meticulously calculated to work perfectly for delicate and precise tasks which are typical in Japanese cooking.
By making it double-beveled, as opposed to single-beveled as Japanese kitchen knives usually are, it is easy to use not only at home but also in professional kitchen.

"I have been using these knives for years and feel they really are the best knives for me. The care is extremely easy and they are always so sharp. Chef Mikizo has been a good friend of mine and I have been lucky enough to be to his restaurant many times. His dishes are extremely elegant and true to Japanese Kaiseki spirit. While he has a huge collection of premium knives himself to use at his restaurant, these knives are what he developed so they work great for both professional chefs and home cooks."
