Sakamoto Kurozu - Made from a 200-year tradition of technique and craftsmanship

In the 1800's, Sakamoto Family began producing Artisan Amber Rice Vinegar in the Fukuyama region of Kagoshima, Japan. The local conditions naturally set the stage for making first-rate Artisan Amber Rice Vinegar.

“Sakamoto Kurozu” is made from a 200-years old Edo period tradition of technique and craftsmanship. Only koji, steamed rice, and water are used, without any additives or coloring, slowly fermented and aged for at least 1 year. The optimum conditions of a warm climate, the availability of excellent water, and the use of handcrafted Satsuma ceramic jars for fermentation and aging, produce the Sakamoto Kurozu.

While this type of vinegar is called "black vinegar", this vinegar has a naturally developed light amber color. On the palate, it has a rich, malty taste but that is not too heavy. This is a very versatile vinegar and great as a seasoning for making vinaigrette, making sushi rice or even drinking with apple juice or sparkling water. This is also ideal as a finishing touch to splash on a soup, stew, grilled food.
