Steam-roasted Oregano Chicken with Avocado Dip

Juicy chicken in a short time


Donabe steam-roaster, "Tochinsai" (large)


2-3 as part of a multi-course meal


  • 6-7 chicken drummettes
  • salt and pepper to taste
  • 1/2 tablespoon dry oregano
Avocado dip
  • 1 medium-size ripe avocado
  • 1 tablespoon creme fraiche (or sour cream)
  • 1 to 1 1/2 teaspoons lime juice
  • 1 small clove garlic
  • 1 teaspoon tahini sauce (optional)
  • salt and pepper to taste


  1. Season all sides of the chicken drummettes with salt, pepper, and oregano. Refrigerate for 2-3 hours or at least 30 minutes. Take them out from refrigerator and bring back to close to just cool temperature.
  2. Fill water in the lid for at least 1 minute and drain.
  3. Set a grate (black-side up) in "Tochinsai", and place the chicken drummettes on the grate.
  4. Cover with lid, and cook in the microwave for 6-7 minutes or until it is just cooked through.
  5. Meanwhile, add all the ingredients for Avocado dip in a food processor and make into a fine paste.  Transfer to a small bowl and set aside.
  6. Serve the chicken drummettes with avocado dip.
  • The suggested cooking time is for 700-watt microwave. For higher cooking power microwave, cook for less time.
  • You can pre-heat the heating grate (black-side up) in "Tochinsai" (with no lid) for 2-3 minutes in microwave for extra sizzling effect for the chicken.
